Fearing’s Restaurant Will Showcase Creations of
Famed Louisiana Chefs John
Folse and Rick Tramonto
DALLAS, TEXAS -- February 28,
2013 – On March 28, Fearing’s Restaurant will host the next big event in
its celebrity chef dinner series, as renowned culinarians John Folse and Rick
Tramonto bring Louisiana’s contemporary creole cuisine to Dallas. The John
Folse/Rick Tramonto dinner will feature a first-time Dallas presentation of
some of the two chefs’ most highly-rated creations, including Creole Snapping
Turtle Soup, Braised Boneless Short Ribs, and White Chocolate Bread Pudding
Crème Brûlée.
Lousiana’s John
Folse founded Lafitte’s Landing Restaurant in 1978, bringing “a taste of
Louisiana” to the world and later bringing it to the 1988 Presidential Summit between
Ronald Reagan and Mikhail Gorbachev. In 1989, Folse became the first
non-Italian chef to create the Vatican State Dinner in Rome, prompting the Louisiana
Legislature to name him "Louisiana’s Culinary Ambassador to the World.”
James Beard Award-winning Rick Tramonto is
the former executive chef/partner of Chicago’s four-star Tru Restaurant and
culinary director of Tramonto’s Steak & Seafood, Osteria di Tramonto and RT
Sushi Bar & Lounge. A well-traveled New Yorker, Tramonto won the coveted Michelin Guide red "M" after
transforming the dining experience at Britain’s Stapleford Park in 1991. Like
Chef Folse, Tramonto has authored many award-wining cookbooks and is a
well-known fixture in the TV food world.
In 2012, Chefs Folse and
Rick Tramonto partnered to open New Orleans’ Restaurant R’evolution, the home
of contemporary Creole cuisine and a marriage of Folse’s classic Southern
approach and Tramonto’s contemporary new world style. Friends for more
than decade, the two chefs deepened their bond in the wake of Hurricane Katrina
when Folse asked Tramonto to join his large-scale efforts to feed survivors and
rescuers across the region.
Inspired by Louisiana’s
swampland culture and its Creole and Cajun cookery, R’evolution NOLA offers
menus featuring Creole’s rich array of courses tied to European aristocracy and
Cajun’s savory one-pot meals, along with acclaimed steaks and the local flavors
of the Louisiana’s seafood and wild game bounty. From rich gumbos to beignets,
crawfish and “pork and beans,” the R’evolution menu offers a remarkable sense
of place experienced in few American restaurants.
The March 28 Folse/Tramonto
dinner kicks off several celebrity chef experiences to be presented this year by
Fearing’s Restaurant. Later events are scheduled to include an April 11 dinner
with Top Chef finalist Jonathan Waxman,
now chef-owner of Barbuto in New York City’s West Village, and the Fearing’s
sixth-anniversary barbecue on August 18, when renowned pit-master Chris Lilly will
again bring a taste of Alabama’s Big Bob Gibson Barbecue to Fearing’s.
