Chef de cuisine

A native Texan from the state’s farming valley, Chef Jorge grew up working on his grandfather’s farm harvesting tomatoes and jalapeños for Pace Picante sauce. After culinary school in North Texas, he went on to work in the celebrity chef kitchens of Kent Rathbun of Jasper’s and Tom Colicchio at Craft. After being named “Top Chef” of John Tesar’s restaurant chef at Knife at The Highland, Gonzalez joined the team at Maui’s Grand Wailea, A Waldorf Astoria Resort, as Executive Sous-Chef.  Having opened Dean Fearing’s restaurant at The Ritz-Carlton, Dallas in 2007, Chef Jorge returned years later, where his expertise has become an integral part of the Fearing’s culinary experience.
