Haute Goat Creamery Jilli: named after Dean Fearing’s pastry chef, Jill Bates, Jilli is completely handmade.  Cheese maker Nancy Patton rolls the fresh cheese into balls that she sprinkles with ash. They are very creamy and taste almost like a brie cheese but with a “bite” in the casing. Very creamy and pungent. Quite unusual.
